Course: Xmas Desserts and Pastries

Level: Intermediate

Description: Each class begins with a demonstration followed by practical. We aim to produce a wide variety of classic pastry desserts & gateau. The techniques used will involve; mousses and handling of gelatin, génoise sponge and roulade, fresh yeast doughs & breads etc.

Course Content: Layering of two tone gateau, Baked chocolate filo- pastry wrapped poached pear, Hot cross buns & Chelsie buns, Individual baileys mousse with passionfruit glaze, A selection of hand-made Easter chocolates etc.

Tutor: John Power

Fee: €145 + €50 Payable to tutor on 1st night for equipment

Duration: 10 weeks

Start Date: 26th September 2017

Class Time: 2.5hrs in duration. 7:00 - 9:30pm.
